As a part of my fabulous staycation at the Hilton Park Cities, I was invited to meet the culinary masterminds and sample the menu of the on-site restaurant, Grain. A gorgeous space with cowboy chic décor is located on the first floor of the property. Executive Chef Jimmy Sanabria and Executive Sous Chef Gabriel Robles incorporate their Puerto Rican and Venezuelan influences into their creations so guests will be delighted to experience these heritage twists on traditional dishes.
Starting our dinner off right, we were served two cocktails. The Agave Flower is a house specialty taking Sauza Blue Agave Reposado Tequila, St. Germain Elderflower Liquor, Lemon Cider, and Cinnamon to create a medley of flavors that explode at first taste! The Cold Snap is a fruiter option made with Hendrick’s Gin, Orgeat Syrup, lime, cranberry, cucumber, and rosemary. The perfect girly girls drink!

To complement our cocktails, the chef’s brought out a Certified Texas Angus Beef Tartare with fish sauce, mint, basil, ginger, and lemongrass. Delicately diced and seasoned, this appetizer was hearty yet light, and just enough to share!

We had two entrees during our visit, the first being a Pan Seared Texas Redfish basted in a local butter served with fresh cucumber and tomatoes placed on an ancho chili sauce with pinto beans and a vegetable broth poured on top. A twist on a French dish that the chefs have envisioned while integrating their cultures.

My absolute favorite thing on any menu are always going to be scallops. The dish at Grain takes some Asian and French influences with their spin on surf and turf. Braised Short Rib with pho seasoning finished off with lemon juice is paired with Pan Seared Scallops with sweet potato, parsnip crisps, and seasonal veggies. A complete dish with the best of land and sea!
